Pork loin chop with apple slaw

15 minutes (plus marinating)
20 minutes

Ingredients:

4 pork loin chops, rind removed

2 tbsp plus ¼ cup extra of virgin olive oil

2 cloves garlic, smashed

½ bunch of sage

1 knob of butter

Apple sauce

4 Granny Smith apples, chopped

2 tsp butter

1 cinnamon stick

¼ cup sugar

2 tsp ginger, grated

½ vanilla pod, split

Juice of 1 lemon

Pinch of salt

½ cup mayonnaise

Apple Slaw

¼ small white cabbage, shredded thinly

¼ small red cabbage, shredded thinly

1 Granny Smith Apple, cut into julienne strips

Cooking Instructions:

1. Rub pork chops with a combination of 2 tbsp olive oil, 1 clove of garlic and ¼ bunch sage, cover and marinate in refrigerator for at least 30 minutes or overnight if possible.

2. Wipe off marinade and cook the chops in a hot pan in ¼ cup of olive oil until golden, allowing approximately 4 minutes each side.  Add to the pan the butter, remaining sage and garlic and allow to foam and brown the butter, basting the chops several times.  Remove chops and rest covered for 6 - 8 minutes. Serve with the Apple Slaw.

3. To make the apple sauce, place apples, butter, cinnamon stick, sugar, ginger and vanilla into a saucepan and cook on a low heat until soft, stirring often. Remove the vanilla and cinnamon and discard.  Blend with a hand mixer until sauce is smooth, add lemon juice and cool.

4. Stir in mayonnaise and season with salt and pepper.  Combine cabbage and apples and stir through apple mixture and season to taste.

Asian Pork with vegetables and noodles

Asian Pork
Serves: 4 prep time cook time

Ingredients

  • 450 g trim pork steaks, cut into strips
  • 1-2 tbsp sesame oil
  • salt and pepper
  • 1 onion, peeled and thinly sliced
  • 2 x 400g packet Wattie’s frozen Wok Creations Stir-Fry Malaysian style vegetables.
  • 400 g udon or hokkien noodles
  • 210g packet Wattie's Wok Creations Honey Soy Stir Fry Sauce

Method

1. Season the pork with the sesame oil, salt and pepper. Quickly stir-fry in a hot wok, this may be best done in two batches. Remove pork from wok and keep warm.

2. Add the onion and stir-fry about one minute before adding in the Wattie’s frozen Wok Creations Stir-Fry Malaysian style vegetables .

3. Add the noodles, Wattie's Wok Creations Honey Soy Stir-Fry Sauce and return the pork to the wok. Toss over a high heat until hot. Serve in bowls. If wished garnish with cashew, peanuts or toasted sesame seeds.

Binagoongang Baboy Recipe (Pork in Shrimp Paste)

Binagoongang Baboy or Pork in Shrim Paste is a Filipino Pork dish that is perfect to eat with lots and lots of white rice. the name of this dish literally means pork in shrim paste or pork cooked with shrimp paste. “Bagoong” is a Filipino (Tagalog) term for Shrimp paste, while pork is called “baboy”.

Binagoongang Baboy (Pork in Shrimp Paste) Recipe

I consider pork in shrimp paste as an everyday dish. I usually have this for dinner and I also make many versions of this dish — some versions us hot chili peppers, and there are the sweet and salty version. This binagoongang baboy recipe (also called pork binagoongan) is a simple non-spicy version. I added fried eggplants to help balance the flavor — this means that it can prevent us form eating too much rice.

I am using cooked shrimp paste for this recipe. You can use the ready-to-eat-shrimp paste that comes in bottles. Barrio Fiesta and Kamayan are good brands. If you want to cook your own bagoong, check out this how to cook shrimp paste post.

Binagoongang Baboy Recipe (Pork in Shrimp Paste)

Ingredients
  • 1½ lbs. pork shoulders, cut into cubes
  • ¼ cup shrimp paste (cooked)
  • 2 medium plum tomatoes, diced
  • 1 large yellow onion, diced
  • 1 teaspoon minced garlic
  • 2½ cups beef broth
  • 1 medium Chinese eggplant, sliced
  • ¼ teaspoon ground black pepper
  • 3 tablespoons cooking oil
Instructions
  1. Heat the oil in a cooking pot.
  2. Pan fry the sliced eggplants for 3 minutes per side. Remove the fried eggplants and place in a plate. Set aside.
  3. On the same pan, add the garlic, tomato, and onion. Saute for 5 minutes or until both onions and tomatoes are soft.Note: add more cooking oil if needed.
  4. Add the pork slices in. Cook until the color of the pork turns light brown.
  5. Pour-in the beed broth. Let boil. Cover and simmer for 45 to 60 minutes or until the pork is tender.
  6. Add the shrimp paste. Stir and cook in low to medium heat for 3 to 5 minutes. Note: there should still be some liquid in the pot. If the pot is almost dry, add 1 cup of beef broth.
  7. Add the fried eggplant.
  8. Tranfer to a serving plate.
  9. Serve. Share and enjoy!
