Pork & Ginger Stir-Fry

Ingredients

  • 1 tbsp sesame oil
  • 1/4 cup cashew nuts
  • 300g 100% NZ pork stir-fry*
  • 1 tbsp grated fresh ginger
  • 1x red pepper, deseeded and cut into strips
  • 2 cups stir-fry vegetables e.g. courgettes,
    red onions
  • 2 tbsp reduced salt soy sauce

*Schnitzel and fillet are ideal pork cuts for stir-frying

Method

Step 1

  • Heat the oil in a wok or fry pan.
  • Add the cashew nuts, pork and ginger and stir-fry until pork is brown.

Step 2

  • Add the red pepper and vegetables.
  • Lightly stir-fry until just cooked and still crispy.

Step 3

  • Add the reduced salt soy sauce, stir to heat through and serve with noodles.
