Ham Hash Browns

Ham Hash Browns

Ingredients 

  • 60ml oil
  • 400g potatoes, peeled, cooked and roughly chopped
  • 1 tsp crushed garlic
  • 4 spring onions, sliced
  • 200g lean ham, diced
  • 100g mushrooms, sliced
  • Freshly ground black pepper

Method

Step 1

  • Heat the oil in a large pan. Add the potatoes and cook for 5 - 7 minutes, stirring now and then, until brown.

Step 2

  • Add the garlic, spring onions, ham, mushrooms and cook, stirring, for 2 minutes. Season with pepper.

Step 3

  • Serve with a poached egg and tomato salsa.
