Ingredients
- 60ml oil
- 400g potatoes, peeled, cooked and roughly chopped
- 1 tsp crushed garlic
- 4 spring onions, sliced
- 200g lean ham, diced
- 100g mushrooms, sliced
- Freshly ground black pepper
Method
Step 1
- Heat the oil in a large pan. Add the potatoes and cook for 5 - 7 minutes, stirring now and then, until brown.
Step 2
- Add the garlic, spring onions, ham, mushrooms and cook, stirring, for 2 minutes. Season with pepper.
Step 3
- Serve with a poached egg and tomato salsa.
