Ingredients
- 1 tbsp sesame oil
- 1/4 cup cashew nuts
- 300g 100% NZ __pork stir-fry*
- 1 tbsp grated fresh ginger
- 1x red pepper, deseeded and cut into strips
- 2 cups stir-fry vegetables e.g. courgettes,
red onions - 2 tbsp reduced salt soy sauce

*Schnitzel and fillet are ideal __pork cuts for stir-frying
Method
Step 1
- Heat the oil in a wok or fry pan.
- Add the cashew nuts, pork and ginger and stir-fry until pork is brown.
Step 2
- Add the red pepper and vegetables.
- Lightly stir-fry until just cooked and still crispy.
Step 3
- Add the reduced salt soy sauce, stir to heat through and serve with noodles.
