Moroccan Mince

Ingredients

  • 500g 100% New Zealand Pork Mince
  • 1 tsp each paprika, ground ginger, cumin and cinnamon
  • 1 onion, chopped
  • 1 carrot, sliced into thin strips
  • 1 green pepper, deseeded and sliced
  • 1x 400g can salt reduced tomatoes, chopped (Keep juice)

Method

  1. Heat a heavy based pan, add the mince, paprika, ginger, cumin and cinnamon. Stir fry 5 - 6 minutes.
  2. Add the onion, carrot, green pepper and tomatoes with juice.
  3. Stir until boiling, lower heat and simmer for about 10 minutes.
  4. Serve with couscous and a salad.

Variation:

  • Use as a filling for 2 pies.
